Grilled Lamb Chops with Garlic & Rosemary

Ingredients:
8 lamb loin chops (approx. 100–120g each)
3 cloves garlic, minced
2 tbsp fresh rosemary, finely chopped (or 1 tbsp dried)
2 tbsp olive oil
1 tbsp lemon juice
Salt and freshly ground black pepper
Method:
Marinate the chops:
In a bowl, combine garlic, rosemary, olive oil, lemon juice, salt and pepper. Rub the mixture onto the lamb chops. Let them marinate for 30 minutes (room temperature) or up to 4 hours in the fridge.Preheat the grill or pan:
Heat a BBQ grill or heavy-based frying pan over medium-high heat.Cook the lamb:
Grill the lamb chops for 3–4 minutes per side for medium-rare, or longer depending on your preferred doneness. Turn once only.Rest before serving:
Remove from heat and let rest for 5 minutes, loosely covered with foil.Serve with:
Steamed green beans, roast potatoes, or a simple Greek salad.
