Grilled Lamb Chops with Garlic & Rosemary

Prep time: 10 mins | Cook time: 8–10 mins | Serves: 4

Ingredients:

  • 8 lamb loin chops (approx. 100–120g each)

  • 3 cloves garlic, minced

  • 2 tbsp fresh rosemary, finely chopped (or 1 tbsp dried)

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt and freshly ground black pepper

Method:

  1. Marinate the chops:
    In a bowl, combine garlic, rosemary, olive oil, lemon juice, salt and pepper. Rub the mixture onto the lamb chops. Let them marinate for 30 minutes (room temperature) or up to 4 hours in the fridge.

  2. Preheat the grill or pan:
    Heat a BBQ grill or heavy-based frying pan over medium-high heat.

  3. Cook the lamb:
    Grill the lamb chops for 3–4 minutes per side for medium-rare, or longer depending on your preferred doneness. Turn once only.

  4. Rest before serving:
    Remove from heat and let rest for 5 minutes, loosely covered with foil.

  5. Serve with:
    Steamed green beans, roast potatoes, or a simple Greek salad.
