Method

Step 1:
Heat oil in a large saucepan over medium-high heat. Add onion and cook for 3–4 minutes until softened. Stir in curry paste until fragrant.

Step 2:
Add stock, tomatoes, lentils, and barley. Cover and bring to a boil. Reduce heat to low and simmer for 20–25 minutes or until barley is tender.

Divide among bowls, top with coriander, and serve with crusty bread.
