Potato Chip Charcuterie with Brie and Cranberry: A Party on a Tray

This recipe is my spin on the viral chip charcuterie trend, and it’s all about contrasts: salty chips, crispy bacon, gooey brie, and a pop of sweet cranberry. It’s indulgent, playful, and guaranteed to bring smiles the moment it hits the table.
The best part? It’s endlessly customizable. Swap brie for blue cheese, cranberry for caramelised onion jam, or drizzle it all with hot honey for a spicy-sweet twist. The only real rule? Choose sturdy chips — because flimsy ones just can’t handle this much goodness.
Ingredients
4 short cut bacon rashers, very finely chopped
165g packet sea salt potato chips
125g wheel brie, cut into 14 wedges
2 tbsp whole cranberry sauce
40g (1/2 cup) finely grated vintage cheddar
Fresh chives, finely chopped
Method
Step 1
Cook bacon in a frying pan over medium heat for 3–4 minutes until golden and crisp. Drain on paper towel.
Step 2
Preheat oven grill to high. Spread chips on a large baking tray. Sprinkle with bacon and top with brie wedges. Add dollops of cranberry sauce and sprinkle with cheddar. Grill for 2–3 minutes until cheese is golden and bubbly.
Step 3
Top with fresh chives and serve immediately.
