Super Protein Chicken Crunch Salad
We love a salad with real crunch. The texture is actually what makes or breaks it for us. With this salad, we’ve packed in our favourite crunchy fruit and veg to give it maximum texture – think celery, cucumber, apple and snow peas. But it’s not just about texture – the apples lend a natural sweetness that’s reminiscent of an old-school Waldorf salad, while yoghurt brings creaminess and lemon juice adds a refreshing acidity.
This salad gives you an incredible protein boost thanks to lean chicken breast and almonds — 32.1g to be precise! It’s also low in calories, gluten-free and low fat. Yet, it’s still a showstopper on the table – perfect for gatherings, summer lunches, or even as a fresh main meal for guests.

Ingredients (11)
200g snow peas, trimmed
2 (about 180g each) cooked skinless chicken breasts, chopped
4 celery sticks, finely chopped
1 large Lebanese cucumber, deseeded, finely chopped
1 large red apple, cored, finely chopped
130g (½ cup) natural yoghurt
2 tbsp fresh lemon juice
1 tsp Dijon mustard
1 tbsp chopped fresh chives
2 baby cos lettuce, coarsely chopped
35g (1/3 cup) flaked almonds, lightly toasted
Method
Step 1
Place snow peas in a heatproof bowl. Pour over enough boiling water to cover and set aside for 30 seconds. Refresh under cold running water then drain.
Step 2
Combine the chicken, celery, cucumber, apple and snow peas in a large bowl.
Step 3
Whisk together the yoghurt, lemon juice, mustard and chives in a small bowl. Add 1-2 tsp water if the dressing is too thick.
Step 4
Add the dressing to the chicken mixture and toss gently until combined. Add lettuce and half the almonds and toss gently again. Serve immediately sprinkled with the remaining almonds.
