Tuscan Salmon and Risoni Tray Bake
On weeknights, the last thing anyone wants is a mountain of dirty dishes. This Tuscan-inspired salmon and risoni tray bake is the answer—creamy, comforting, and on the table in just 30 minutes. Ingredients
2 tbsp olive oil
4 (about 150g each) Tassal Fresh Tassie Salmon, skin off
305g (1 ½ cups) dried risoni pasta
3 garlic cloves, crushed
1 tbsp finely chopped fresh rosemary leaves
2 Massel Chicken Style Stock Cubes
300ml pouring cream
625ml (2 ½ cups) water
75g (½ cup) semi-dried tomato strips (not in oil)
60g baby spinach
1 bunch broccolini, trimmed
1 tbsp drained capers, fried (see notes)
1 lemon, rind finely grated
Method
Step 1
Preheat oven to 200°C/180°C fan-forced. Heat 1 tbsp oil in a large flameproof baking dish over medium-high heat. Cook salmon, top-side down, for 2 minutes or until golden. Transfer to a plate.
Step 2
Heat the remaining oil in the same dish over high heat. Add risoni, garlic, and rosemary. Cook, stirring, for 1 minute or until fragrant. Stir in stock cubes, cream, and water. Bring to the boil, then remove from heat. Cover tightly with foil and bake for 12 minutes.
Step 3
Remove foil carefully (watch the steam). Stir in tomato strips and spinach. Add broccolini, pressing gently into the risoni mixture. Return salmon, top-side up, pressing into the pasta. Bake uncovered for 10 minutes or until broccolini is tender. Sprinkle with fried capers and lemon rind to serve.
Recipe Notes
To fry the capers, heat 1–2 tablespoons oil in a small frying pan over medium-high heat. Cook the capers for 3–5 minutes or until crispy and golden. Transfer to a plate lined with paper towel to drain.
