1 tbsp olive oil
1 brown onion, finely chopped
3 garlic cloves, crushed
500g beef mince
2 tbsp tomato paste
1 tbsp Italian herbs paste
400g can diced tomatoes
100g roasted capsicum, chopped
1 large carrot, grated
1 zucchini, grated
400g can four bean mix, rinsed and drained
12 fresh lasagne sheets
225g cheese pasta sauce
250g ricotta
1 cup (120g) grated tasty cheddar
Method
Step 1
Preheat oven to 180°C. Grease a 6-cup (1.5L) ovenproof dish. Heat olive oil in a frying pan over medium heat. Add onion and garlic. Cook for 2–3 minutes until softened. Add mince and cook, stirring, until browned.
Step 2
Add tomato paste, herb paste, and diced tomatoes. Stir for 2 minutes. Add capsicum, carrot, zucchini, and ¼ cup water. Cook for 3–4 minutes until thickened. Remove from heat, stir through beans, and season to taste.
Step 3
Soften lasagne sheets in hot water for 1–2 minutes, then drain. Add filling to each sheet, fold to enclose, and place seam-side down in the prepared dish.
Step 4
Mix ricotta with pasta sauce and spoon over parcels. Sprinkle with cheddar. Bake for 35–40 minutes or until golden and bubbling.
Serve with: fresh basil leaves or a green salad.

Freeze uncooked parcels for up to 3 months. Thaw overnight and bake at 180°C until heated through.
